Along the Raritan Bay coast of New York City’s Staten Island, a number of unusual gardens are growing: They’re made up of oysters.
The three oyster gardens on Staten Island are part of 40-some gardens in the NY/NJ Baykeeper’s Oyster Gardening Program, which has established underwater plots from Staten Island, to Jamaica Bay, all around the city in the Harlem, Bronx and East rivers, and up the Hudson River.
